Rice noodles 2 cups
Chicken broth 4 cups
Chicken breast sliced and boiled 1 cup
Carrot sliced-1/2 cup
Red bell pepper 1/2 cup
Celery chopped 1 cup
Spinach chopped- 1 cup
Cooking oil- 1 tsp
Salt and pepper as required
Cilantro chopped 2 tsp
Ginger chopped 1 tsp
Red chillies 2
Cherry tomatoes 1/2 cup
Shallots finely chopped - 2
Cilantro minced- 1tsp
Roasted cumin seeds- 1 tsp
Turmeric 1/2 tsp
Asafoetida powder 1/2 tsp
Lime juice 1 tsp
Direction of Preparation:
1.Drop the noodles in the boiling water until undercooked.Drain.
2.Grind all soup paste as mentioned above in a blender and reserve it in a bowl.
3.Heat oil in a pan, saut the soup paste for about 1 minute.
4.To the above spice mix, add the chicken broth and bring to a boil.Add sufficient salt and pepper .
5.Add vegetables into the soup and cook until they are tender, still crisp.Add more broth to adjust the consistency.
6.To serve, pour soup broth into a serving bowl and add chicken slices and cooked rice noodles. Serve immediately.
7.Garnish with chopped cilantro.
