Litti Chokha is a conventional snack in most parts of Bihar and Jharkhand. Litti is comparable to kachoris made of wheat flour and has gram dal filling in them.These Littis are dipped in pure ghee to enrich the flavor.Chokha, on the other hand, is a potato flavored dip that accompanies the Litti.The veggies that go in making the Chokha are coal roasted or commonly burnt in a gas stove. I first tried these assuming they were kachoris, I instantly fell in love with this snack.It is a true treat to the taste buds.From then on I was on a hunt for this recipe, based on many foodies suggestions I follow this recipe step by step for perfect Litti Chokhas.
What goes in making the Littis'?
FOR OUTER PART OF THE LITTI:
1)Wheat flour-2 cups
2)Ajwain- 2 cups
3)Cow ghee-2 tbsp
4)Salt as required.
1)Bhune channa(roasted) -1 cup
2) Garlic cloves finely chopped- 5 cloves
3) Onion chopped-1 large
4)Ginger grated -1
5)Green chilies finely chopped- 3
6)Coriander leaves finely chopped- cup
7)Onion seeds-1/2 tsp
9)Lemon juice-1 tsp
10)Red chili pickle-2 tsp (To bring up the spice.)
11)Salt- as required
1)Mashed boiled potatoes -2
4)Garlic cloves peeled - 3
5)Green chilies chopped-4
6)Ginger grated sized
8)Coriander chopped-1 tsp
9)Mustard oil-2 tsp
The method of preparation:
1)Firstly to prepare the dough for Litti, Sieve the flour in a bowl, add required salt, carom seeds and oil. Knead the dough with water without forming lumps. Knead until the dough is soft and keep aside covered.
2)To prepare the filling for Litti, grind together black pepper and gram to form the sattu. Now take off the sattu in a bowl, add all the spices and grated ginger, green chilies, coriander, lemon juice, and mix well.To adjust to a crumbly texture add water and oil.
3) Now take the medium-sized dough and make small balls of it.Roll it like a small chapati, and place 2 tsp filling on it, pinch it from all sides so that filling gets cover from all sides to form a sealing. Now the Litti is ready, drop them in oil to deep fry or roast in the oven to make it more healthy.
4)Now to prepare the Chokhas for the Littis, boil the potatoes remove the skin and set aside. Roast brinjal and tomatoes on the stove on medium flame until it grows to be soft. Remove the peel from brinjal and tomatoes then mash garlic along with potatoes. Add finely chopped onion, coriander leaves, grated ginger salt, green chilies and mustard oil.Mix the paste together without lumps and the chokha is ready.
5)Transfer the Chokha into a bowl, and dip in the Littis for ultimate taste and savor it hot on a chilly evening.
