Rogan Josh is one of the signature dishes of Kashmir. Robust with varied spices, the dish is cooked with the aroma of fennel seeds, garam masala, bay leaves, and turmeric and is really a celebration of all senses.
How to prepare Rogan Josh?
1 Kilo meat
1 cup mustard or refined oil
3 teaspoon red chilli powder
3 teaspoon fennel powder
2 tsp cumin powder
1 tsp brown cardamom powder
2 tsp ginger powder
4 pieces of green cardamom
1 tsp asafoetida
2 cinnamon sticks
2 bay leaves
1/3 tsp saffron
1 cup curd and salt to taste
Properly wash the meat. Heat oil in a pressure cooker then put cinnamon, bay leaves, cloves, green cardamom, 1 tsp salt, asafoetida and meat simultaneously. Fry the meat until it turns brown, once done pour a cup of water. While stirring the meat add some red chilli powder and saffron into the meat and keep about a minute.
Mix the curd adequately in the mixer and pour it into pressure cooker. Keep on stirring till you get a reddish tinge. Add 2 cups of water, fennel powder, ginger powder and cook for 2 minutes. Make sure if the meat is tender, peel and grind green and brown cardamom and add to the meat dish. At last cumin powder and simmer for a minute and serve.
