This yummy dish is a combination of tender tofu and spicy chilli and bean based sauce, scattered with crushed meat and topped with some chopped scallion pieces.
How to cook Mo Po Tofu?
Key Ingredients 500 grams fresh tofu, 150 grams minced beef and 50 gram green onions.
Seasonings - 120g cooking oil, 5.5g salt, 20 ml Mapo tofu sauce (soy sauce), chilli powder to taste, 20g Pixian bean paste, 250g double-boiled soup (made from bone with ginger and pepper), 40g starch and water (the starchy sauce), (2g chicken powder).
Slice the tofu small cubes, and put them into a bowl of hot water to remove astringency. Cut the green onions into small pieces; make the starchy sauce by mixing the starch and water.
Heat up a frying pan with the prepared vegetable oil, fry the chopped beef till it becomes light brown, then add salt, Ma Po Tofu sauce, chilli powder and pixian bean paste and keep frying. Add the double-boiled soup and tofu cubes (Use moderate heat to cook till tasty).
Later add garlic sprouts and soy sauce, cook for a few seconds and thicken with the starchy sauce. If you want you can add chicken powder.
Finally the yummy dish is ready to serve.
