1 pound boneless and skin out chicken breast cut them into 1-inch cubes
1/2 tsp salt
1/4 tsp pepper
3 tsp canola oil, divided
1 thinly sliced onion
6 garlic cloves, crushed
2 tsp minced fresh gingerroot
2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained
1 can (28 ounces) crushed tomatoes
1 huge peeled sweet potato and cut into 1-inch cubes
1 cup reduced-sodium chicken soup
1/4 cup creamy peanut butter
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 tsp cayenne pepper
Hot cooked brown rice, if needed
Instructions to prepare West African chicken stew
Sprinkle chicken with little salt and pepper. Take a Dutch oven and cook chicken over medium heat by adding 2 tsp oil. Cook for 4 to 6 minutes or until no longer pink.
In the same pan, fry onion, add ginger and garlic; cook for 1 minute.
Stir it in the peas, tomatoes, sweet potato, soup, peanut butter, 1-1/4 tsp thyme and cayenne. Boil it in low flame cover and simmer for 15 to 20 minutes or until potato is tender. Add chicken and heat through.
Now, your chicken stew is ready to serve.
